The reason coconut oil does not adversely affect cholesterol is because it is composed primarily of a unique type of fat molecule known as a medium-chain fatty acid (MCFA). These fatty acids are different from those commonly found in other food sources and are burned almost immediately for energy production, and so they are not converted into body fat or cholesterol and do not affect blood cholesterol levels. Numerous studies have clearly demonstrated that coconut oil has a neutral effect on cholesterol levels. ...Because coconut oil stimulates metabolism it actually protects against high cholesterol.
The antimicrobial properties of coconut oil (which consists of triglycerides), therefore, become active only when ingested or otherwise converted into free fatty acids or monoglycerides.
The medium-chain fatty acid that appears to have the greatest overall antimicrobial effect is lauric acid (and monolaurin). This is the largest of the MCFA consisting of a string of 12 carbon atoms.
Coconut and palm kernal oils are by far the richest natural sources of this super nutrient. ...by far the best and richest natural sources of lauric acid are coconuts and coconut oil.
